Our olive oil is produced within the Factory di Colubro and is characterized with highest quality, which begins with the careful choice of varieties and the olive hills that are hosted and maintained within strict biological rules. Highly trained specialists, whereby only perfect olives are picked, harvest the olives by hand.

During the washing process, they continue with thorough sorting and separation of the fruit from the leaves. The grinding procedure takes place within 1-2 hours from harvest, hence the perfection of our oils. This scrupulous method creates oil with high contents of Polyphenol found to be an incredible antioxidant.

Harvesting time for our olives is the month of October right through the first week of November, and as mentioned above, the olives are collected by hand. The regions for which these olives grow best are Scansano
